Ethnic food
Ethnic food (n.) Food eaten by relatively poorer people who are either immigrants or the descendants of slaves. Can be contrasted with "haut cuisine", which means "food eaten by expatriates".
One of the ways immigrant communities can ingratiate themselves with a cynical and hostile urban elite is to serve "ethnic food", and thus the Chinese Takeaway, the Pizzeria, the Salsa bar, the Texmex joint, and the Couscous lounge all signify social integration based on the slow sale of calories from one social class to another.
